Storing Leftover Royal Icing While Drying Cookies!
Decorating By naetoile Updated 25 Jan 2017 , 11:11pm by ypierce82
I need some help!!! I will be making decorated royal icing cookies for the first time and am a little unsure on how to proceed with storing the icing.
I will be using pasteurized egg whites to make my icing and using 15-20 second icing to BOTH outline and flood my cookies.
My real question is.....once I have flooded my cookies and leave them overnight to dry.....what do I do with the left over royal icing in my piping bags? I'll still be needing them the next day to continue decorating.
I have read that leaving icing in the bags for too long and cause them to start separating.
So how do I go about this??
Hello! I always use meri-white in my royal icing. Normally i just empty the piping bag into a small thick plastic bag, and seal it really tight. I never put it in the fridge, as that dries it out pretty fast. I leave it in a cool cupboard in the kitchen. Refill the piping bags the next day. Although this is just what I do. There may be some other way I don't yet know about!
So you reuse the same piping bags from the day before?
The icing leftover in the bags doesn't crust inside?

Nope, fresh piping bags! Sorry, I should have been clearer!

Great Thanks! So I can store my piping bags. Do you store in the fridge or just on the counter?

If you want to reuse the same bag and not empty it, make sure it is sealed so it doesn't form crust, and place a wet paper towel in a cup, set the bag tip down into the cup, that will keep the tip from crusting, too. Sorry I hit submit too soon lol
