So, I have a slight dilemma and I am stuck.  I have a bride that loves the brush embroidery technique and the look of lace.  Normally that wouldn't be a problem because I love it too and it works fantastically well on fondant or gumpaste.  However, she hates fondant.  She wants her wedding cake to be frosted in buttercream with no fondant.

This brings me to my question/dilemma.  Can you do brush embroidery on buttercream?  Is it possible?  I have seen someone do it on buttercream, but I didn't know if anyone else has had much success with it.

One of my ideas is to have the crusting buttercream (use the Viva method), get it super duper smooth, use a stencil to place the lace look on the cake, let that crust, then over-pipe some of the pattern for a slight 3-D effect, then take the brush embroidery from there.

Does that sound at all like a remote possibility or am I just spitting into the wind?

Any suggestions are also welcome!

Thanks,

Em

You can absolutely brush embroidery on buttercream, as long as it is the crusting type (not meringue) - we did this in pastry school.  Sounds like you have a good plan.

Thank you!   It's good to know that I'm not too far off the mark!
