one of your deciding factors is the weight of the cake -- if you want to deliver assembled you wanna make sure you can handle the weight -- either by yourself or use a cart* or have a helper you can count on --
*and make sure the cart will travel well where you are going
if you assemble on site -- one way to do it is to -- place the drape on a sheet pan covered with plastic wrap then place a wet wrung out towel on top of that to keep it soft & give it some weight
