Hi, a few of my customers enjoyed their rich fruit Christmas cakes so much they asked for another one for Easter! If I bake them now they will be mature in time. I know that simnel cake is different, it's a light fruit cake usually with no alcohol and not made in advance. I just wondered if I could put marzipan into the rich fruit Christmas cake mixture like a simnel cake 3 months in advance or whether it would go off?
