I am making my second wedding cake in February. Its a naked cake and I am very excited about it however I didn't document the process of making my first wedding cake very well so I was wondering if y'all cold look over my planned baking/assembling timeline and tell me if it looks like I will have enough time for fixes if needed. Also how many days in advance can I make a cheesecake?
A week before - make jam filling and preserve.
3 days before - bake cakes, torte, wrap in plastic wrap and put in freezer.
One day before - Take cakes out of freezer, make frosting. Defrost cakes, simple syrup, fill and frost. Store in fridge, each tier separate.
Day of - Deliver cake. Assemble and decorate with flowers and berries.
