Can I add wilton white white to candy melts to achieve a more pastel tone? I suppose I could add white melts to the colored ones, but I am trying to avoid going to the store, LOL!

Sorry, in my experience, regular Wilton white white will make the the candy melts seize.

You cannot add anything that is water based to chocolates/candy melts or it will seize (as mentioned above).  I suggest you purchase some white candy melts and stick them in the freezer.  This is the easiest way to tone down pre-colored candy melts and get pastels.  The freezer will keep them well for months.
