LOVE the NFSC recipe. It is the only cookie recipe that I use. Would like to use this recipe to make ginger cookies. Do I add powdered ginger with the flour ( and if so, how much?) or do I add another type of ginger, such as crystalised ginger?

Adding powdered ginger is a great idea. But the amount is a personal preference. I suggest you halve the recipe and start with 1 teaspoon. That will give you a starting place.

Crystallized ginger needs to be cut fairly small for rolled cookies and has a couple of issues that you may or may not be a problem for you. Sometimes the pieces don't cut well when using the cookie cutter; and depending upon the brand, there might be bleeding when they're baked.
