How To Cover A Dummy Cake & Share Your Non Perishable Filling Recipe?

Hello lovely bakers
I have a 10th Anniversary 3 tier (10, 8, 6) cake coming up in Dec end. The 10" will be a dummy cake and rest will be chocolate cake with ganache frosting & fondant covered with sugar flowers & real rhinestone brooch(es). My questions are:
1. How to cover this Dummy cake in fondant? Do I need to frost it as well before covering it with fondant?
2. Can this 10" dummy cake be able to hold the weight of fully decorated 8" & 6".
3. How do I dowel them? I always used wooden dowels to support the weight of the top layer.
4. I saw some fruit fillings at cash & carry ( over the shelf at room temperature) Can these fillings be used between the cake layers and stay at counter top without refrigeration for 2 days? That packet doesn't say anything like that.
5. If not, do you mind sharing your secret filling recipe which can stay good at room temperature for at least 2 days.

1. Cover your dummy in a thin layer of shortening, then roll out your fondant and cover as usual. You could also cover it in a thin layer of ganache, scraping as much of it away as possible. Buttercream tends to slide off the Styrofoam in my experience.
2. I've done a 6" and 8" stacked on top of a 10" dummy and there was no problem at all.
3. The dummy doesn't need dowels. You can use your normal method for the 8". Wooden dowels are great.
4 & 5. I haven't really had occasion to use fruit fillings, so I'm not too sure about these. But I would think that packaged fruit fillings would have enough preservatives to keep them fresh at room temperature. Homemade fruit fillings would be a problem though. I normally fill with buttercream, ganache or caramel.
