I want to try making these for my holiday baskets, I usually make ganache and dip into chocolate but I would like to find a hollow sphere mold where I can pipe in whipped ganache, not a regular mold that is flat on the bottom but a full sphere, any recommendations??? Ive been looking and all i can find is fat daddios but it doesnt have good reviews. (Anyone use that before?) Also what chocolate do you find holds up best for this as far as the shell? Can I use my same melted chocolate? (Ghiradelli 60% bar) thanks!!
What exactly are the reviews saying about them? I find with the magnetic truffle molds, many people do not know how to use them properly and end up blaming the mold itself and not their technique. I have the Fat Daddio magnetic truffle mold that makes 28 pieces and have not had any problems with them. I would imagine there are a few others on the market if you are concerned.
