Can you freeze a cake covered in chocolate ganache?
Sarah
according to epicurios you shouldn't freexe ganache because it gets milky in some places: article below
i am making a flourless chocolate cake
that will need to sit out for hours(6 or
more) i was thinking of freezing it but
wanted to ice it with a ganache. my
question is when can i ice this, can i
freeze it or will it sweat, or should i apply it
to the cake while the cake is frozen? i
would like to do as much as possible
beforehand. at what point do you apply
the ganache before it hardens? thank you
for any help on this
ganache
I've never had any luck freezing ganache,
what I would probably do is freeze the cake,
and cover with ganache when it is
defrosted. It will sit at room temperature
quite comftably overnight if needs be. When
I've tried to freeze it in the past, it's
gone slightly milky in places. Perhaps
others have had better luck though!
