Help! Advice Needed

Hi  I'm making a cake for my son-in-law's birthday  I was planning on doing a baseball cap cake covered in fondant.  He wants the frosting to be a chocolate whipped cream frosting.  I found a recipe online that is easy and had wonderful reviews.  My concern is that it said that the consistency holds up for 1-2 days in the refridgerator.  I will definitely have to make this at least one day in advance.  Does anyone have an easy, delicious recipe that will hold up longer than 1 - 2 days? Also will whipped cream frosting hold up well under fondant?  And lastly, are there any issues with refrigerating fondant?

No it won't unfortunately. Whipped cream is too soft to hold up fondant.

I personally do not refrigerate fondant! It can sweat when you take it out and the fondant can get sticky (I use homemade mmf) but that's just me!
