Help! Advice Needed

Hi  I'm making a cake for my son-in-law's birthday  I was planning on doing a baseball cap cake covered in fondant.  He wants the frosting to be a chocolate whipped cream frosting.  I found a recipe online that is easy and had wonderful reviews.  My concern is that it said that the consistency holds up for 1-2 days in the refridgerator.  I will definitely have to make this at least one day in advance.  Does anyone have an easy, delicious recipe that will hold up longer than 1 - 2 days? Also will whipped cream frosting hold up well under fondant?  And lastly, are there any issues with refrigerating fondant?

Unfortunately I don't have answer to a few of your questions. But I can help with some. Yes whipped cream frosting will be fine in the fridge for 1-2 days. Fondant is fine too in the fridge. 

As for your main question, fondant "over " whipped cream frosting ....? Ummm, I'm really not sure about that one. I fact, I'd be a little skeptical about it. 

Maybe another experience member here can help you with that. I'm still on intermediate level

Sometimes you, the baker/decorator, have to tell "customers" what can and what cannot be accomplished with cake and frosting.  Do NOT mix whipped frosting and fondant--it will become a slimy mess.  You can put buttercream or ganache under fondant, NOT whipped frosting.

You can place a fondant cake in the fridge, but if you are making the day ahead, you do not need to refrigerate at all.  Fondant acts just like plastic wrap to keep the moisture in the cake.    If you use perishable fillings or real cream cheese, then you must refrigerate.   Fondant cakes can be refrigerated, but do not touch the surface of the fondant until 100% of any condensation has disappeared after removing from the fridge.
