I tried to make a drip cake last Saturday and it was a disaster. I made sure to cool the ganache and my cake was super cold. I would love to know if anybody has any tips or recipes that they can share with me. I would love to try it again. Thanks in advance.
Im not sure if it was too runny but it just ran down and made a mess and the drip marks were barely visible. I didn't take any pics. All I did was use my bench scraper to clean it all off and cover the top of the cake with candy. [postimage id="5530" thumb="900"]
Sounds like it may have still been a bit too warm or it just had a bit too much cream in it. If the drips were barely visible sounds like it is as you say and was just a bit too much on the runny side. Maybe next time reduce the amount of cream you use in the ganache and just let it cool down a little longer.
For kiddie cakes I don't use ganache for drips - I just use icing sugar mixed with milk, a little vanilla and whatever colouring suits the cake. I save the ganache for the grown ups who will appreciate it more. You might find that a little easier to work with as it doesn't need any cooling down, you are just messing around with the consistency. Once you know the consistency that works for you then you can try getting your ganache to a similar state.
