I'm doing a wedding cake and the Bride would like a white, rustic buttercream decoration on the outside. What do you suggest is the best kind of buttercream??

Just plain old American buttercream. You can get white gel colour to achieve a better white.

I'm going to sound stupid now but how do you make it (I'm in the UK). X

american buttercream is the name given to probably our (UK bakers) most common buttercream - 1/2 butter to icing sugar.

I do rustic designs fairly often with my american buttercream. I use half margarine/shortening, and a 2:1 (2lbs sugar to 1lb fat, etc) powdered sugar to fat ratio. It doesn't crust, but lends itself to that design beautifully.

Thank you pastychef, much appreciated.  It's the first time I've decorated with just buttercream on the outside so your advice is well received. X

This is just buttercream, with the recipe I gave you. I use water to thin it to the consistency I want.
