Just wondering if anyone can help me out....I'm looking to make a millefoglia cake and I'm looking for a light fluffy icing to cover the cake and maybe make some rosettes on top. I'm not a huge fan of buttercream or whip cream icing. Looking for something similar to Nurtifil or Nutri Whip but homemade.

Thanks

You could make a traditional crema chantilly. Or even a pasty cream. I find with the flakiness of the mille feuile a classic whipped cream with fresh fruits is the tastiest. But maybe you could explain what you are looking for tastewise...?
