I found a recipe, a few months back, for a "coating" for mini cheesecakes. I can see the picture clearly in my mind (which means I must have found it on Pinterest), however I've lost the pin. I never looked at the recipe...but it was kinda like the sour cream topping for cheesecakes, and was designed for you to 'dip' mini cheesecakes in it, so that they are fully encased. I hope this makes sense and that someone can help me!

i do not have that -- sorry -- but in my experience 'dipping' anything that's not straight chocolate that's been properly thinned is quite a feat for most of us -- to dip something like cheesecake you probably will have a little moisture on them so the dipping substance has to be pretty fool proof -- unless you rolled them in something else first -- idk -- it always seems so straight forward until i get into it --

i hope you find something

there's always pouring fondant:

I'm not going to be much help, but wanted to tell you my experience with coated cheesecakes.  I used the same recipe that I normally use for truffles.  They dipped beautifully, but because the cheesecake had to be refrigerated, the chocolate would sweat when I served.  They tasted great, but they were not pretty.  Just my 2 cents.  I hope you find what you are looking for.
