Hi everyone  I have to have a three tiered cake with a Noah's ark and fondant animals to make for a family christening on  Sunday and they have forcast rain from Thursday onwards. The cakes mudcake and  are already ganached and in th freezer but I'm worried about when i should cover them with fondant. I'm only learning and have heard that fondant doesn't like the moisture and Im afraid I will have trouble covering the cakes. Can anyone suggest whether I cover them on Thursday before it starts Raining or will that be too early ?  Would really appreciate some advice Thank you oh if this makes any difference I live in Queenslad Australia

You can cover them whenever, it doesn't matter. Fondant doesn't like humidity in general, but if you take the cake out of the freezer and try to cover it it will probably be slightly more difficult than doing it at room temp because you'll be dealing with the condensation on the cake anyway. I wouldn't  be scared to cover a cake when it's raining, it's not that big of a deal, so don't  worry about it too much.
