I am in search of a really moist rainbow cookie recipe, can anyone point me in the right direction?

I don't have a recipe for them, but if I remember correctly they are more cake like than cookie like in their consistency... with I believe apricot jam between the layers... I don't see a moistness issue...

I seen a recipe on foodnetwork but wasn't sure how good it was, i didn't see this one.  I'm definitely going to try thanks again
