Hi everyone, I tried having a bit of a search but couldnt find anything, I'm looking for a coconut and raspberry cake that I could use for a tiered wedding cake.

My coconut cake is my basic vanilla cake... subbing out the buttermilk for coconut milk... a few tablespoons of very finely ground coconut added... and if I have on hand, coconut oil for some (not all) the butter... makes it a really really white cake too since I don't have any real vanilla in it then...

You could try that...

Just use your basic vanilla recipe and substitute like I do...  that is what I was suggesting...
