I see cakes that are fondant covered with shiny gold glitter on the sides, heavy coverage at the bottom fading away towards the top. What type of glitter is used for this effect and is it attached with piping gel?

They usually use candy confetti-type discs that you can get in the cake decorating section of craft stores. Attach those to the sides of the cake using piping gel or corn syrup, then when it dries, paint it with an EDIBLE gold paint. A lot of the paints they use in demos etc are NOT edible, so make sure whatever you use is food grade.
