..To leave a cake covered with buttercream then fondant on top out overnight? I used water instead of milk for the buttercream, but does the butter itself spoil? Should I cover it? Not sure how I will, I have nothing tall enough, I just don't want to make my coworkers sick. Especially since it's for my boss!

You can leave the cake out over night...and dont worry you wont make your boss sick...the butter will not spoil overnight....

It will absolutely be ok. I leave buttercream-covered cakes out all the time.

I routinely leave butter out on my counter (I hate when cold butter tears the toast!). Plus, the sugar (powdered) is such a great preservative, the cake will be fine.

Thank you. When I make cakes for home I usually leave them out, and I know a lot of people leave butter out routinely (in fact, I don't think I've ever had bad butter!), but I am a little paranoid about making someone sick. I would be horrified if I did that!
