a friend of mine, i beleive used clear gelatin on a ice cube tray, that should work..
I wouldn't say difficult - just need to be careful as it's super hot liquid. There's a class on Craftsy (if you know what that is) that gives an intro to isomalt (free). I've only used the nibs, so all I had to do was heat them up and pour, but there are other forms of it, too, that are cheaper. Just need a bit more work before you can pour. But for clear cubes you just need a silicone ice cube tray and some Isomalt.
