I've only made it a couple times. The best one I made was with store bought pasteurized egg whites. Can i  pasteurize it myself by starting it in a double broiler like smbc and bring it to 160 degrees? Would that  jeopardize the icing? Thank you.

Yes you can do it and it will be fine.
