Just wondering if anyone has a doctored up carrot cake mix recipe that you wouldn't mind sharing that works well under fodant? I have an order this weekend that's two tires and she want both carrot cake and I hear a lot of recipes are too moist for fondant
CARROT CAKE, DOUBLE RECIPE
2 box Carrot Cake mix (16.5 oz)
1 cup flour
1/2 cup sugar
1 teaspoon baking powder
1 cup water
1 cup canola oil
6 eggs
1 cup finely chopped walnuts (toasted nuts are better)
2 can (8 oz.) crushed pineapple with juice
2 to 3 cups grated carrots
Carrot Cake, Single recipe

I made my first ever carrot cake 2 weeks ago and made it square as I've not fondanted a square cake before. The recipe I used is here - http://www.lindyscakes.co.uk/2010/01/11/a-kiwi-carrot-cake-recipe/ and it produced a really lovely moist and light cake.
