Really in a bit of a dilemma at the minute I've been asked to do a 2 tier cake bottom tier traditional Victoria sponge which I've got no problem with doing and the top tier Toffee fudge but the problem I'm facing is I can't find a reciepe for a Toffee fudge cake anywhere I've been all through my cake reciepe books and looked online but no joy!

I'd do a chocolate cake with caramel in the icing for a filling, then sprinkle crushed toffee on top of each layer of filling before you assemble each layer. That way you'll get the chocolate and the toffee, and the caramel will mirror the flavor of the toffee.
