I am making a wedding cake and they have asked for a lemon sponge which is fine, however just after some preference what you would sandwich the cake together with, vanilla buttercream or lemon buttercream.

Either one, or both (if you tort your layers) will be fine. I like to tort my layers and would probably use both as a "taste surprise".
