Informative Speech On Making Buttercream Icing

I am doing an informative speech on the steps of making butttercream icing. I have to have one peer reviewed resource and I can't find anything. I searched history of cake decorating, etc but nothing. Can you help??
look up (google) sharon zambito's sugarshack buttercream and see all the cc threads? her buttercream has been peer reviewed extensively -- maybe something like that?
Peer reviewed usually refers to scientific studies that have been critiqued by others in the field. Is this for a general class? I would talk to your professor/instructor about this criteria, I really doubt you are going to find a peer-reviewed study on buttercream!
also check the wilton website for reviews of their buttercream -- it's prolific and famous like sugarshack's -- and what kind of buttercream did you mean -- so far i referenced american buttercream for you did you mean a different kind?
