I am making cupcakes and wanted to double my recipe. I doubled everything except the eggs! :( Do I need to just dump this batch or can it be used?

I think time is your determining factor.  If there's no time to gamble go ahead and mix a new batch. If there is time to experiment I would measure out the proportion of the batter to add one egg, scramble the egg first and then gently add the one egg by hand and bake up some cupcakes and see how they are.

@jadaniya    So what happened?  What did you do and how did it come out?

Thanks for your help! I was in a time crunch and ended up making a new batch.... the batch the had less eggs tasted fine but the texture was a little weird. *sigh. Thanks for your advice!
