Wasc Ok Left On Counter For 2 Days?

I made the WASC cake and plan to make the chocolate version as well today (Friday) They are for an open house on Sunday .. Will they be alright left on the counter in plastic cupcake containers? No mold/going bad issues to worry about? No room in the fridge for 12 dozen, thanks!!


I'm not sure about WASC cupcakes, but I can confirm that the WASC cakes are fine. I did a comparison between several scratch recipes vs doctored cake recipes to test for moistness after five days of sitting on the counter. They were covered in butter-cream, but that should be comparable to being sealed in cupcake containers ... I think? The only problem might be if you sealed them while they were still hot and steamy.

Thanks Nancy .. I'll be covering mine in buttercream as well, haven't yet as I'm worried about mold .. eeks .. I didn't put them in the containers when they were hot or steamy, cooled all the way down .. They are in plastic containers that hold 24 cuppies, and snap together twice on each end/side ..

You are fine for 4-5 days on WASC. There are enough preservatives in the cake mixes to retard mold for at least that long! I don't leave them out that long for customer cakes but there is always a container of cake scraps on my counter for that long! No mold before 5 days, EVER!

You just made my day!!!! I was really nervous mainly due to the sour cream and the french vanilla creamer I used .. but I figured once baked, they probably had a few good days .. I am such a worry wart!
