Would You Re-Bake?????

Hi! I baked an Elmo cake last Tuesday and froze it. It was suppose to be for this past weekend...however the party was cancelled due to hurricane rita. The party has now been changed to October the 9th. I used the watered down apricot glaze and the cake is wrapped well. Will the cake still be good or should I rebake it??? I usually only freeze my cakes for about a week or so I am really not sure. Thanks for any advice!!! icon_smile.gif

I think the cake should be fine especially with the glaze and well wrapped.

I think you will be fine too! I have frozen cakes for several months with no problems.

As long as the cake is well-wrapped, it should be OK. I used to have a nursing home that would wait until the last minute to order so I always had a stand-by in the freezer just for them (I use to work at the nursing home).
