icon_biggrin.gif I need a recipe for a cake for a 40th Birthday cake for a friend.

She is celebrating her 40th birthday shortly and also having a surprise icon_surprised.gif wedding.

The wedding cake I have under control. But she has no idea on what flavour or filling she would like. icon_cry.gif

The only requests I have is that children must be able to eat the cake, (so no alchol) and the cake must be decorated to suit the beach theme. icon_smile.gif

The brain has died with everything I have had to do for this party! icon_cry.gificon_cry.gif

If you go in the Galleries and search, there are alot of wonderful beach / ocean / seashell themed cakes there for inspiration and to kick-start your creative side!

You could always do a "virgin" pina colada cake...Coconut layers moistened with a pineapple syrup, layered with a coconut buttercream and crushed pineapple (or you could even use a coconut cream pie filling)- I used to do a similar cake for a beachfront restaurant except I also used Malibu rum in the cake syrup, but I think you can leave it out and it won't be missed. That cake always makes me think of the beach!
