Need Recipe For Beach Theme Birthday Cake

I need a recipe for a cake for a 40th Birthday cake for a friend.
She is celebrating her 40th birthday shortly and also having a surprise 
wedding.
The wedding cake I have under control. But she has no idea on what flavour or filling she would like. 
The only requests I have is that children must be able to eat the cake, (so no alchol) and the cake must be decorated to suit the beach theme. 
The brain has died with everything I have had to do for this party!

You could always do a "virgin" pina colada cake...Coconut layers moistened with a pineapple syrup, layered with a coconut buttercream and crushed pineapple (or you could even use a coconut cream pie filling)- I used to do a similar cake for a beachfront restaurant except I also used Malibu rum in the cake syrup, but I think you can leave it out and it won't be missed. That cake always makes me think of the beach!
