What's the smallest plate that the Floating Tier Stand holds? 8"? I would go with the smallest one and then each two inches bigger than the last. So, an 8", a 10" and a 12". Certainly that would be enough to feed 100.
According to Wilton that serves 118 but I find their serving size a little scant...so the extra 18 would make up for it. That is unless they want to keep their top tier...then you'd have to go with something bigger for the bottom two or make a separate 6" for them to keep.

I haven't used the floating tiers stand but I have used the garden stand. People the serve the cakes appreciate those more than the stacked cakes (it seems that way to me). Alot of the times, I make that another 6" or 8" cake that looks like the top tier and have in a box already for the couple's 1st anniversary cake. Especially if they are not sure how many people will show and worry that they will have enough cake--so I tell them how many they cake serve with and without top. Many of the bride's seem to like this and if they have too much, then they will take one with them on the honeymoon, since they probably don't get much cake at reception.
