??? About Chocolate Strawberries On Cake...

How far in advance can you put chocolate dipped strawberries on a cake? I have to deliver a grooms cake in the morning and the wedding isn't until 6:00? Will that be ok? Also, will they last if I make them the night before but don't put them on the cake until the morning? Thanks for your help!

You may well find that they 'bleed' that far in advance. Can you put them on at the venue, or just prior to delivery?

That's my problem. I'll have to deliver that morningand the wedding isn't until 6:00. I guess I could ask the MOG to place them before the reception, but I hate to do that.

Personally, I wouldn't dip them the night before. I try to always dip my strawberries the day I am deliverng my cake. In this case, since you are delivering the cake in the morning, I definitely would not dip them the night before. Also, make sure your strawberries are absolutely dry when you dip them. You may already know this, but do not wash them in running water. Clean them with a damp cloth, barely damp, just enough to get them clean. Then make sure the are 100% dry before dippng. You can do that the night before. Any moisture before dipping will contribute to bleeding. Also, pick strawberries that aren't too ripe.

On my chocolate strawberry basket I had dipped them the night before for a morning delivery, but they didn't come until the afternoon -- when the strawberry goo was running down the sides of the cake. The last thing you want to do is dip them before transport.
