Frozen Cake "sweating"

Do any of you have a problem with your frozen cakes "sweating" through your icing? That sounds gross, but I don't know how else to describe it. I had frozen a cake & it iced beautifully frozen, but while I was working on the borders I started to see water glistening on my cake. icon_surprised.gif Has anybody else had that happen & do you have any tips to keep it from happening again?

Well that happens when you ice a frozen cake. I dont ice mine frozen, so I dont really have any tips on how to prevent it. Do you need to freeze it before icing it? Can you just pop a thawed cake into the freezer to firm it up a little before icing? When i let my frozen cakes thaw on the counter in foil, I can see all of the condensation forming on the foil. I dont really think there is anything you could do to stop it. I guess if you have to ice it frozen then just dont touch it until it evaporates.

don't stress, anddon't touch. let it come to temperature and you'll be fine.

Wow, I wasn't aware that you could even ice a frozen cake!!! That's great news if there aren't any drawbacks!

I didn't have to ice it frozen, I had just heard that it was easier to do that way & wanted to try it. icon_biggrin.gif I just panicked a little when I saw the water! icon_surprised.gif So I should just leave it alone & the water will dry? I want to pat it with a paper towel so bad I can hardly stand it! icon_cry.gif

I ice mine frozen and get that. I just wait a while and it goes away. Beware sometime color mixes with the water a leaves spots on the cake. wait for it to dry before adding color

I ice my cakes frozen all of the time and they work out just fine!

I had that with a recent wedding cake I had....freaked me out! LOLL But, it was just the crumb coat and after it came to temp it was fine. The problem was it took soooo long to come to temp because it was the 16" layer! I wouldn't advise trying to do this if you need a cake in a hurry! I did it because I needed to freeze the cake in order to be able to put the layers together without cracking.

When I was a newbie I frosted a couple of cakes while they were frozen. It took FOREVER (like 24 hours) for my frosting to crust.

Took me a long time to figure that one out...
