Can I Frost And Refrigerate Cupcakes The Night Before Delivery?

I think it's best to put the frosting on before delivery, but want to ask the question, as I have to deliver at 9 am. and this is my 1st order of cupcakes.

Problem is- the frosting is white chocolate cream cheese frosting, so they'd to be refrigerated.  And I have to get the frosting out very early to cool down in order to be piped.

I do this with cake and add the decorations the next day, but am worried that cupcakes will dry out or anything else that will effect them.

I am also filling them with ganache.  Can I fill them the night before or wait on that too?

I think definitely you can put on cream cheese icing.....I think the ganache however, would harden too much.

AGanache for filling should be pretty loose. Earlene Moore's website has a cream cheese bc recipe that does not need to be refrigerated. You could add melted white chocolate. As a general rule, you don't want to refrigerate cane/cupcakes unless you absolutely have to.
