I use stabilized whip cream. All you have to do to smooth it is use a cut square piece of poster paper. You will be amazed at how smoothly you can get a cake when using poster board. It works like a dream. Whip cream does not crust but you can get it smooth.

ANo paper towel method with WC but can warm up the spatula run it thru and it works smoothly.
