I want to make the bottom layer of my wedding cake carrot cake.  I've found a lot of good recipes, but they are for 8" pans.  Does anyone know the correct measurements of ingredients to make a 2 layer carrot cake using 16" round by 2" high pans?

The volume of an 8inch pan, 2 inches high, is about 100 cubic inches.

The volume of a 16inch pan, 2 inches high is about 400 cubic inches.

So I'd say your recipe x4 would suit.
