Finally found a pastry worthy of Nana's fruit mince.  It has custard powder in it and is really tender and short.  Delicious.  Made the first batch (12) of mince pies and they were all gone in 2 days.  I think I might have just eaten 8 to hubby's 4!

I found a nice cookie recipe once that called for custard powder but we don't have that in Alaska, and I wasn't sure what it was, or if it had another American equivalent.

@cazza1   I'd love to try it.

Were they custard creams MB? , Mum used to make them. I am really not sure what you would use instead of custard powder though.

@Mimimakescakes, well I'll be amazed.  It looks like a recipe for vanilla pudding mix in a box.  Thanks.

Actually the recipe was for a pressed cookie.  Here is the link.  I wanted to try out these lovely cookie cutters so I bought one - the pineapple tart cookie one.

but the recipe called for custard powder.  I tried my roll out cookie dough recipe ( http://www.cakecentral.com/a/no-fail-sugar-cookies ) and it didn't work for me.  I think that I threw the press away from frustration. http://browncookie.com/collections/cookie-molds/products/pineapple-tart-cookie-cutter  I love the look of this type of cookie.

AI was thinking that instant custard from a box is very similar to vanilla pudding mixes in the States!

We have these delicious biscuits (cookies!) in Australia called melting moments, they're very short sandwich biscuits and just as the name says, they melt in your mouth. Theyre made with custard powder too. I always make them when I'm trying to cheer my husband up, they're his favourite. You can fill them with buttercreams of all different flavours, his favourite is raspberry or lemon to cut the sweetness a little.

are we veering too far off course for a fruit cake thread or is fruit in the cookie filling keeping us on track????  :grin:

MB I need to express my perplexity at the recipe for make your own custard powder.  Custard has eggs in it to thicken and custard powder is yellow.  Did I miss that somewhere in the recipe.  I would have expected to see powdered egg in the recipe.  I don't have a box as it is tipped in the container but next time I go to the supermarket I will try and remember to have a look at the ingredients.  

 

I love melting moments.  All they ned is a firm glade icing and they are divine.  One of the best bickies in the world.

AYes [@]cazza1[/@], real custard or creme anglaise does have egg yolks in it. It is divine. BUT custard powder (at least the Foster Clark brand I grew up on) does not contain egg - it has:

Cornflour (Wheaten, Maize), Sugar, Salt, Natural Colours (Curcumin, Paprika), Natural Flavour.

The pack does warn that it may contain traces of egg though....

Can't say that I'm that keen on paprika melting moments, but I guess that's what gives the fake custard its lovely yellow-orange colour! And I'm pretty sure curcumin has been identified as the antiflammatory agent in some spices, so I'm guess that melting moments could then be considered medicinal.

Thanks Winniemog, now I won't have to go looking.  My time would obviously be better put to use eating melting moments to help with the inflammation of my brain from overuse on cake decorating ideas.

ignore me @winniemog, I'm always off track!!   the custard powder must give a nice flavor and vanilla custard box mix should substitute well.

Hay---- I just found 'custard powder' on amazon,com.  Is this the right stuff?  Because if it's on amazon I can buy it.

@Krypto  that is exactly what I wondered myself.  There has been so many delicious new recipes that I've tried from the gals in these other continents.

ps: I just took out one of the fruitcakes and am enjoying with coffee.   The Betty Crocker recipe called for Orange juice as part of the batter, but I'll bet you could use Rum instead.

AThat is precisely it MB, it's an English brand but the same stuff. I reckon you could use the vanilla pudding mix instead, but I don't know the exact ingredients of a pudding mix so can't guarantee it.

Cool, now I might have to buy that 'pineapple tart' plunger cutter again.  They sent the recipe with the cutter, and now I'd be able to make the proper cookie dough to work with the plunger cutter.  Course you can put any flavor of fruit jam in the cookie.

And back to fruit......melting moments should definitely have passionfruit icing in them.  Nothing else is as good.

Lemon is great too in melting moments.  I am just a a passionfruit addict.  My recipe actually has lemon icing in them.
