AI know I've seen a ton of posts on dairy free buttercream, but none (so far) that actually answer the question, "is there a dairy-free buttercream that will work under fondant so that the bulge doesn't appear". Do any of your more experienced bakers have a recipe that will fit this bill?

I would just use the classic Wilton butter cream..it can be just substitute the margarine for more shortening and the milk for water and it will definitely make a sturdy damn. It doesn't taste all that great, but it will work for a dairy free butter-cream.

yup...like Ginger says, But add butter flavoring and/or extra vanilla and it is ok.
