I need to combine the above 2 themes and  was wondering if anyone can help me with ideas. 

I have never made a 3d cake before so any guidance on how to make a 3d rock cake wall/mountain would be much appreciated. I was thinking of minecraft characters climbing the wall. Would greatly appreciate if you could point me towards any tutorials or give me some guidance.

I think you are already on the right track...do a minecraft 'grass block' with 'steve' or 'creeper' abseiling down or rock climbing up.

An easy 3D idea is to have 2 square/rectangular cake boards at right angles (to make an L shape - a board with backdrop) - put square cake in the corner (ie a grass block). On the still showing section of the upright board above the top of the cake, decorate the backdrop board with fondant 'indoor rock climbing wall hold thingys' in different colours - then have a mini Steve or Creeper harnessed up the wall with some 'fondant' rope dangling down to the grass block below.
