I need to purchase a different oven for my small bakery. I have used  Blodgett and a bakers pride convection ovens and dislike them. I'm considering getting a Deluxe CR2-3 3 pan oven.

 I'm told they bake with convection/ radiant heat. Could anyone give me guidance on this. It would be greatly appreciated.

i love mine -- the fans are more gentle than a regular convection -- each of the three shelves has several heat rods that stretch from side to side underneath -- it bakes on temperature almost exactly for the times listed in any given recipe -- i absolutely love mine

A[SIZE=3][/SIZE]I have 2 deluxe ovens! K8 is right. I also love my ovens. My cakes come out perfect, in my opinion.
