I have an order for a cake similar to this...they want their ruffles more ruffled and taller. My question is do I use fondant or would modeling chocolate be better? Love trying new designs but they make me so nervous!!

I've never made one but I think fondant would be the thing to use.
They may be able to help you on this thread, the cakes look similar.
