I got my first real paid order for a wedding today and I am so exctied!! She wants just white with raspberry filling. What do you guys use for fillings, jam, or something else. Any suggestion would be great. Oh yeah, and she needs it this weekend....AGH! ![]()
I have used seedless raspberry preserves by itself or I have also used the preserves mixed in with some buttercream, yummy!
I've used seedless raspberry preserves alone and also folded into Bettercreme--this makes a light, mousse-like filling that has a good shelf life at room temp. I whip the Bettercreme as directed and then fold in the raspberry preserves to taste. It gets rave reviews when combined with any type of cake.
Bettercreme is a non-dairy icing product made by Rich's. I can get it at GFS stores, but it looks like they don't operate in KS. A cake decorating supply store near me carries it and a similar brand (I forget the name of it), so you might want to call around if it interests you. I've also seen posts stating that Sam's Clubs with bakeries carry it and will sell it to you.
