I mostly use American BC, and just change it up a bit and add different extracts etc to get good flavors. But I am looking for a nice light not overly sweet, whipped type frosting/filling that I can use for wedding cakes and other custom party cakes. Would swiss meringue butter cream be a good idea? I would love some input on this from all of you amazing cake makers out there :) Thanks in advance !
