This is probably a VERY newbie question, but what's the best way to attach chocolate covered strawberries to the side of a cake so they stay? I want them to cascade, like this cake:

I have also made white fondant hearts, about 1 1/2 inches across, that I'm going to pipe "congratulations" on (one per letter), that I want to attach to the side of the bottom layer. What's the best way to keep them "stuck".

Thanks!

The fondant hearts can be attached with just a little square of fresh fondant and a tiny bit of moisture to glue it to the back of the heart, then either a bit of moisture to attach it to the iced cke, or a dab of melted white chcolate, or royal icing will keep it in place as well. I would use the plastic cocktail picks to attach the chocolate covered starwberries to the cake.

Thanks.....since I'm not setting the cake up, it has to be put together and I won't be there to fix anything. I'm nervous about the fondant hearts staying on the side of the cake.

is your cake iced in bc or fondant??? If its iced in bc.......you can just stick the fondant hearts right on before your icing crusts over and you shouldn't have a problem!!! As for the strawberries.......I'd probably jam some toothpicks into them (make sure the people eating the cake know) and might not hurt also that while you're sticking them in place to kind of put some squirts of chocolate here and there as you're stacking them up the side of the cake to give you a little extra insurance......might not be a bad idea to give the people you're giving the cake to a little baggy with some extra toothpicks in case one or two fall out.

The cake will be iced in buttercream. Thanks for the suggestions! I might wimp out on the cascade, but I'll see how brave I'm feeling tomorrow when I put the cake together.
Honestly, I have no idea how you all do it. This is my busiest baking week for quite a while (120 cupcakes, 2 white chocolate/raspberry cheesecakes and a 2 tier chocolate fudge cake, filled with strawberry mousse, iced in chocolate BC, topped with chocolate dipped strawberries).

Of course, it wouldn't be so bad if I didn't have to go to work too! icon_lol.gif

Maybe I see this cake differently, but it looks like the strawberries are stacked to reach the top of the cake so it looks like they are cascading. Thereby adding a bit of frosting to glue them together.

Gotta love that icing glue! It beats that old white paste anyday!

As to CC....lordy.....I find I always have the website up when I'm home! It is incredibly addictive! I keep swearing I'm not going to do more decorated cakes, just my cheesecakes, and then someone asks if I can do a bumblebee cake (or whatever!) and I'm looking through pictures and saying to myself "I can do that!" icon_surprised.gif

Oh....I'm doing a bumblebee cake in April.....*rofl*
