gingerbread or cover a foam core board with fondant or modeling chocolate--
to keep it standing upright--you can sink the end of it into a slot built into the bottom board--
you could also lay the brief case open too--easier on the nerves--but either way--
if you do the gingerbread--substitute honey for most or all of the molasses--honey holds against humidity--molasses does not--

but come to think of it if i covered a foam core board i'd use candy clay aka modeling chocolate
