hi! anyone has a good recipe for a pistachio cake?

I was thinking about a white cake with pistachio cream (custard + pistachio paste).. but I'm willing to try something new :)

Here is a pistachio cardamom cake receipe I have used several times.  Very tasty.


Pistachio Cardamom Cake

3 c flour                                                                 2 c sugar

1 sm pkg instant pistachio pudding mix              ½ c unsalted butter

1 tblsp baking powder                                          1 tblsp vanilla

1 tsp ground cardamom                                       1 tsp almond extract

1 ¼ c buttermilk                                                    ¼ tsp pistachio flavored oil

½ c sour cream                                                      ½ c pistachios, chopped

1/3 c vegetable oil                                                5 eggs


Preheat oven to 325°.  Prepare cake pans.  Sift dry ingredients.  Combine buttermilk, sour cream and oil into another bowl and set aside.  In stand mixer with paddle attachment, cream the sugar and butter until light and fluffy (5-7 min).  Add vanilla, almond and pistachio flavors.  Add eggs one at a time.  Turn mixer to low and alternately add the dry ingredients with the wet ingredients, starting and ending with dry ingredients.  Fold in chopped pistachios.  Pour batter into prepared pans and bake for 25-30 minutes or until toothpick inserted comes out clean.
