I just found out that the lady that was going to make me 4 sheet cakes for my daughter's wedding on Oct. 8th, can't do it. I have no backup. So, if I bake them Wednesday night, frost them on Thursday (just buttercream), will they still be fresh for Saturday afternoon? I have no way of refrigerating them and Friday is going to be last minute stuff and rehearsal. Fortunately someone else is doing the actual wedding cake. Thanks!

Someone correct me if I'm wrong but I'm pretty sure the buttercream will seal in the freshness of the cake for at least 4 days. Sorry I couldn't help you out a bit better
