Hi,

I know there are similar threads on here, but I can't find any that exactly answer my question!

So I made a cake last week with chocolate ganache buttercream and had a load left over, so I put it in airtight containers in the freezer.  I know the cream I used has gone passed its use by date, but just wondering if the buttercream will still be ok?

I still don't need it for another couple of weeks, I don't want to make anyone ill, but would rather not have to bin it either!

Thanks for any help/advice!

I read on Nigella's website it can be frozen (airtight) for up to 3 months, then to re-use thaw in the fridge overnight, but it should not be refrozen after that.  HTH :)
