Question About Freezing A Cake

Can I freeze a whole cake iced with Swiss Meringue Buttercream?  I would take it out of the freezer a good 10 hours before it would be served.

you sure can. chill it in the fridge until it's firm and then double or triple wrap it in plastic wrap. 

 

Rose Berenbaum says to defrost it in the wrap, but I don't see how you can do that without making a mess of the BC, so I recommend unwrapping first. It will probably take the entire 10 hours to defrost, maybe longer for the center

Sure. Box the cake and wrap the box in some saran wrap and a layer of foil.  If possible, place in the fridge 24 hrs. before serving to slowly defrost, still boxed & wrapped.  Put box on the counter, still wrapped, for a few hours before serving/display.  Unwrap box & remove cake.

 

If refrigeration is not an option, take it out of the freezer but keep it boxed & wrapped for several hours so that condensation settles on the box & not on the cake.

 

The cake will be perfectly fine.
